The Levasseur family produces apples since 1982, handmade cider vinegar since 1989, and alcoholic ciders since 1992. The cider vinegar is made from apples strictly from their orchards. The apples are treated with care and a minimum of watering, to insure that there are no residu on the fruits. They are then handpicked, washed and pressed to extract the juice. The two fermentations required to produce vinegar are absolutely natural : they don't use chemical accelerant, nor acetic powder. The process takes up to a year and a half. The vinegar is then aged in oak barrels before being bottled. The products are available every year a Salon des Métiers d'art of Montreal, a guarantee of their quality, since only the best is found in that fair.
